Damon is a trained botantist, mathematician, molecular phylogeneticist (DNA sequencing, etc.) and a mycologist (mushrooms and fungi) who has collected for the Royal Ontario Museum and was trained in fungal biology and identification under Dr. Jean-Marc Moncalvo (curator of the ROM Fungal Herbarium. He’s even helped to redefine the taxonomy of Eastern North American Morel mushrooms. His love of food, nutrition, knowledge and nature led him to creating Culture City which aims to bring delicious and new foods to vegans and vegetarians (and everyone else!), while creating as little environmental impact as possible.
